Snowball Cookies
Ingredients:
1 cup butter or margarine
1/2 cup sugar, powdered -sifted
1 teaspoon vanilla
2 1/2 cups flour -sifted
1/4 teaspoon salt
3/4 cup chopped pecans
Directions: Cream butter in
a large bowl. Then, add sugar - cream until light.
Add vanilla and stir. Sift flour and salt and add
to mixture. Add nuts and stir. Shape into "snowballs."
Place on ungreased cookie sheet. Bake for 15
minutes in a 350° oven.
Makes 36 snowballs

Microwave Peanut
Brittle
Ingredients:
1 c Raw peanuts
1 c Sugar
1/2 c White corn syrup
1/8 ts Salt
1 ts Butter
1 ts Vanilla
1 ts Baking soda
Directions: Stir
together peanuts, sugar, syrup, salt. Cook 4
minutes on high. Stirring well, cook another 4
minutes. Add butter and vanilla to peanut mixture
stirring to blend. Return and cook 2 minutes. Add
baking soda and gently stir till foamy. Pour onto
aluminum foil. Let cool, break into pieces and
store air tight container.

peanut butter balls
Ingredients:
½ cup and 2 tbsp. butter
2 cup chunky peanut butter
1 tsp. vanilla
3 cup powdered sugar
3 cup Rice Krispies
18 oz. Chocolate chips
¼ bar paraffin
Directions:
Melt butter and peanut butter together. Mix in
sugar and vanilla. Stir in Rice Krispies, using
your hands, and form the mixture into balls. Melt
the chocolate and paraffin in a double boiler.
Dip the balls in the chocolate-paraffin mixture.
Place them on a cookie sheet, which has been
covered with waxed paper. Pop into freezer for 5
minutes to set. Note: If mixture is too dry, add
a little water, 1 teaspoon at a time. If mixture
is too wet, put in refrigerator before forming
into balls.

Ingredients:
1 1/2 Cups sugar
2 cups miniature marshmallows
1 5-ounce can evaporated milk
1/4 cup margarine or butter
1 12-ounce package semisweet chocolate pieces
1 teaspoon vanilla extract
1 10 to 12-ounce can mixed nuts
Directions:
In 2-quart glass measure, cook sugar, 1 cup
marshmallows, milk, and margarine on High for
four and a half to six and a half minutes until
melted, stirring once during cooking. Stir; cook
for another one and a half minutes. Stir in
chocolate and vanilla until smooth. Fold in nuts
and remaining marshmallows. Spread in foil-lined
8" by 8" baking pan.
Refrigerate
until firm. Cut into 24 pieces.

Applesauce Cookies
Ingredients:
1 cup packed brown sugar
1 egg
3/4 cup shortening
1 cup applesauce
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup chopped walnuts
1 cup raisins
Directions:
Preheat the oven to 325 degrees F (165 degrees C).
Grease cookie sheets. In a medium bowl, cream
together the brown sugar and shortening until
smooth. Stir in the egg, and then the applesauce
until well blended. Combine the flour, baking
soda, salt, cinnamon, nutmeg, and cloves; stir
into the applesauce mixture. Mix in walnuts and
raisins. Drop by teaspoonfuls onto the prepared
cookie sheets. Bake for 10 to 12 minutes in the
preheated oven, until the edges start to brown.
Cool on cookie sheets for a few minutes before
removing to wire racks to cool completely.

Cookies
Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
Directions: Preheat
oven to 375 degrees F (190 degrees C). In a small
bowl, stir together flour, baking soda, and
baking powder. Set aside. In a large bowl, cream
together the butter and sugar until smooth. Beat
in egg and vanilla. Gradually blend in the dry
ingredients. Roll rounded teaspoonfuls of dough
into balls, and place onto ungreased cookie
sheets. Bake 8 to 10 minutes in the preheated
oven, or until golden. Let stand on cookie sheet
two minutes before removing to cool on wire racks.
